Profile: The range of premium extra virgin olive oils in your pantry really needs to include a top picual, the most predominant cultivar in Andalucia. So we’ve selected this beauty, which recently won Gold at the prestigious 2024 New York International Olive Oil Competition (NYIOOC).

This is a medium-to-robust intensity organic extra virgin olive oil, with 10 to 14 kg of green Picual olives required to obtain 1 litre of oil (a cheap extra virgin olive oil may require just a quarter of that!). Cold extracted within 4 hours of harvesting.

Prettily represented by ‘The Bee’, a key daytime pollinator that serves as a biological indicator of the health of the Nobleza del Sur olive groves.

Sensory Analysis:
Taste: Medium to intense fruitiness; balanced on the palate with a distinct green, fresh profile and a slight bitterness and spiciness.
Aroma: Fresh almond fragrance and subtle sensations of grass, leaf and artichoke.

Food pairings:
Use with all meats, fish and seafood; pasta and pizza: In the preparation and seasoning of all dishes. Try with cheeses, semi-hard (eg Gouda, Port Salut) and hard (eg Parmesan, Pecorino). Beautiful over desserts such as semi-melted chocolate ice cream and flake salt.
