Organic and Biodynamic Extra Virgin Olive Oil from Andalucía, Spain

Aceites Finca La Torre is one of only eight extra virgin olive oil brands worldwide in the Flos Olei Hall Of Fame. And their Hojiblanca has received the maximum 100 out of 100 score in Flos Olei competition, a feat achieved by just one other Spanish extra virgin olive oil. It's no surprise - Olivver has visited the finca (mill) and seen first hand the tireless dedication of master producer Victor Serrano and his team, with a grove dedicated to biodynamic methods.

Profile: Intensely fruity, with notes of freshly cut grass and olive leaf. On the palate it is bitter, progressively spicy and lingering, with hints of green almond, apple and banana peel. Complex and well balanced. 

Analysis:
Acidity: 0.1% - 0.2%
Polyphenols: typically 400-600 mg/kg
Peroxide Value: ~5-10 mEq O2/kg

Harvest time: October/November
Preserved under nitrogen until bottling.

Tasting notes: Intense fruitiness.

Aromas: Delicate notes of fruit and is fresh, sweet and spicy, with hints of apple and banana.

Food pairings:
These flavors work in cooking a wide variety of dishes from keto salads, meat marinades, grilling, fish dishes, sauces, carpaccios, emulsions, vinaigrettes, cream soups, pasta, sautéed dishes, vegetable preserves, and many more meals. The oil works well in sprayers and the bottles make perfect gifts for the foodies and gourmets in your life. Hojiblanca is also a great substitute for butter (use 25% less than the stated butter amount).
